Here is a way to make a quick, easy and also stores well to reheat when you’re on the go.
2 T Canola Oil
1/2 cup Chopped Red Onion
1 cup Jasmine Rice
14 oz Low Fat Chicken Broth
3/4 cup Water
1 cup Canned Corn
2 cup Cooked Chicken
1 cup Low Fat Shredded Cheddar Cheese
1. Combine oil, onion, rice, and broth with 3/4 cups
water in a microwave-safe dish
being partly covered.
2. Microwave on high for 8 minutes.
3. Stir in chicken and corn and let stand for 5
minutes. Stir in cheese. Serve.
